THE RUM
While it is true that in the recent past it has been single casks that have been getting all the attention from whisky and rum aficionados, here at LLS we are perfectly aware that blends can also deliver a great dram. We’re thus syndicating a blend that puts together some highly sought after rums from 5 Jamaican distilleries that share one thing in common: the use of pot stills.
In true Jamaican “funk” style, this blend includes rums from Worthy Park, Long Pond, New Yarmouth, Hampden and Clarendon. All these rums have been made from molasses with long fermentation time to stimulate the formation of esters (i.e. natural compounds that give specific flavour to the spirit). Indeed, while the majority of Caribbean rums ferment molasses for approximately 24 hours, some Jamaican distilleries such as Hampden can stretch the process for almost 3 weeks!
As per Jamaican legislation, the syndicate is officially aged 15 years as it is the age of the youngest liquid in the blend.
On the nose the rum releases aromas of sugar cane juice, banana and spices. The palate is a mix of butter, mace, vanilla and ripe tropical fruit which lingers on. If the traditional Neapolitan “babà” had a liquid form, this would be it!
